Ken’s n-Bean Soup

5 Cups

Any combination of pinto, kidney, white, black beans, lentils, split peas, etc. (any number, hence the “n”).  Make sure to include lentils and/or split peas because these dissolve and thicken the soup.

15 Cups

Water (or 5 cups stock & 10 cups water)

Ham/Port bone

1 Large

Onion (or equivalent), diced

Carrots, diced

5 Stalks

Celery

1-2

Bell peppers

1.5 Tbsp

Garlic powder

1 Tbsp

Parsley (dried)

½ Tbsp

Basil

Bay leaves

3 Tbsp

Salt (to taste)

½ - 1 Can

Tomato puree

 

Cooking Instructions

 

  1. Rinse beans and soak overnight (or use quick soak method).  Keep soak water (unless stock is used)
  2. Add ham bone and all remaining ingredients except tomato puree to beans and soak water.
  3. Bring to a boil, then reduce heat and simmer until beans are tender (2 hours or so)
  4. Taste and adjust salt.
  5. Add Tomato puree during last 30 minutes
