Ken’s Marinated BBQ Chicken

Vinegar (Wine or Apple Cider

Basalmic Vinegar

Chopped Garlic

1 tsp

Marjoram

½ tsp

1 tsp

Rosemary

½ tsp

1 tsp

Thyme

1 ½ tsp

3 tsp

Parsley (Dried, or equivalent fresh)

 

 

 

½ Bottle

1 Bottle

Mark’s Feedstore Red BBQ sauce


For:

 

4 Lbs

8-9 Lbs

Chicken Legs or Thighs

 

Cooking Instructions

 

  1. Mix all of the marinade ingredients (except the BBQ sauce, it’s not part of the marinade)
  2. Put the chicken into the marinade and marinade for at least 3-4 hours, or overnight (in the fridge)
    (Note: The easiest way to marinade the chicken is to put the marinade and the chicken into a 1 Gal zip lock bag and turn the bag over every hour or so.. I use 2 bags for the “Atkins” amount)
  3. Put the chicken into a microwavable dish and microwave it on high for 15 minutes (to reduce BBQ time)
  4. Take the chicken out of the microwave and coat it with some of the BBQ sauce (I usually reserve some to put on the chicken while it is BBQing.
  5. BBQ the chicken on a lower flame setting with the BBQ lid down, for 30 minutes or more (until chicken is done).   The lower setting prevents the skin from turning black before the meat is cooked.  Turn the chicken a couple of times during the BBQ time to cook it evenly.  The time is just an estimate, make sure the chicken cooks until it is done.
  6. When you place the chicken on the BBQ, drizzle some of the drippings in the dish from microwaveing.  Then during the BBQ drizzle the remainder of the BBQ sauce on the chicken
